Serves 2 · 22 min
Ingredients
- •3 tbsp unsalted butter
- •3 tbsp light brown sugar, packed
- •1 tbsp granulated sugar
- •1 large egg yolk
- •1/4 tsp pure vanilla extract
- •6 tbsp all-purpose flour
- •1/4 tsp fine sea salt
- •1/8 tsp baking soda
- •3 tbsp semi-sweet chocolate chips
- •flaky sea salt flaky sea salt, for finishing
Instructions
- 1.Preheat the oven to 375°F (190°C) and line a small baking sheet with parchment paper.
- 2.Melt the butter in a small saucepan over medium heat, swirling occasionally, until it turns golden and smells nutty, about 3–4 minutes. Pour into a medium mixing bowl and let cool for 5 minutes.
- 3.Whisk the brown sugar and granulated sugar into the browned butter until smooth.
- 4.Add the egg yolk and vanilla extract, whisking vigorously for about 30 seconds until the mixture is thick and slightly glossy.
- 5.Add the flour, fine sea salt, and baking soda, then stir with a spatula just until no dry streaks remain — don't overmix.
- 6.Fold in the chocolate chips.
- 7.Scoop the dough into 4 equal balls and place them on the prepared baking sheet, spaced at least 2 inches apart.
- 8.Bake for 10–12 minutes, until the edges are set and golden but the centers still look slightly underdone.
- 9.Immediately sprinkle a pinch of flaky sea salt over each cookie.
- 10.Let the cookies rest on the baking sheet for 5 minutes — they'll firm up as they cool. Eat warm.
